EASY Plant Based Tacos



These tacos are quick and healthy which makes a perfect combination for a weeknight hit! They feature butternut squash and a crunchy slaw. Feel free to make them your own with your favorite toppings. Recipe below the video.


Ingredients:

~5 c butternut squash, cubed Olive oil

1/2 tsp each: fine sea salt, chili powder, paprika, cumin, garlic powder 1/4 tsp black pepper

1 15oz can black beans (drained and rinsed)


Slaw: 1 bag broccoli slaw

1 bunch kale, chopped

Dressing: 1/2 c non-dairy mayo or non-dairy sour cream

juice and zest of one lime

1/8 tsp cumin

1/4 tsp paprika

1/2 tsp chili powder

1 tsp hot sauce of choice

salt & pepper


Instructions: 1. Preheat oven to 425 F

2. Toss squash with oil and spices and spread evenly on sheet pan

3. Roast squash 10-15 minutes, toss, return to oven for 10-15 until caramelized and tender

4. Combine dressing ingredients

5. Combine broccoli slaw with kale and toss with dressing

6. Toss beans with roasted squash to combine and warm the beans

7. Warm tortillas in a skillet or over flame


Build your tacos with toppings of choice: fresh avocado, fresh lime, fresh cilantro, etc
